Féra à la meunière (lake whitefish lightly floured, cooked in butter, and finished with lemon and parsley) teaches restraint. The fish is delicate, the method is quick, and the one true thing to know before touching the pan is this: a wet fillet cannot gild. Dryness gives the flour its fine grip and lets the butter brown the surface before the flesh overcooks.

The old entry is only a line long because it assumes a lake fish delivered whole, a fish cook who already understands meunière, and clarified butter waiting beside the stove. A saucier, stockpot, and salamander have no work here. For one cook, four skin-on fillets and a 12-inch skillet preserve the intent, while a low oven holds the first pair for the few minutes needed to fry the second. The separate fish station is brigade scaffolding and can go. The last-minute flour, hot butter, and beurre noisette are the dish, and they stay.

When it is right, the féra arrives pale and moist beneath a fine golden crust, with parsley caught in glossy butter and enough lemon to sharpen without bullying the lake fish. Dry the fillets until the paper comes away clean, then flour them only as the pan is ready; that dry, last-minute dredge is the one step that decides the dish.
