A tomato-tinted consommé kept perfectly limpid through careful clarification, then finished with buttery celery julienne and neat dice of savoury royale, an exacting first course made manageable at home.
Consommé Grimaldi teaches one uncompromising principle: the tomato must color the consommé during clarification, never afterward. Stir raw purée into finished consommé and you have a pleasant soup, but you have lost the limpid brilliance that defines this dish. The plain royale, a savoury consommé custard, and pale celery julienne should remain visible through every spoonful.
The original assumed a saucier on staff, ordinary consommé drawn from a stockpot never off the fire, and Dariole-moulds lined up for service. The home equivalent is excellent cold ordinary consommé given a compact second clarification with tomato, plus four small ramekins or one shallow dish for the royale. The book's quart is doubled here to make the required home batch of about two quarts, while its proportions remain intact: eight tablespoons of tomato purée, four moulds' worth of royale, and six tablespoons of celery. Brigade scaffolding goes; the clarification, separately cooked garnishes, real butter, and complete degreasing stay. One cook, one stove, one evening.
When Grimaldi is right, the consommé glows rose-amber yet remains transparent, the ivory royale holds a clean edge, and the celery is tender without surrendering its shape. Heat the clarification slowly, then stop stirring the moment its raft rises. That restraint decides the dish.
