Vanilla ice encloses a pale almond-milk pâte à bombe in this domed frozen classic, where evenly clothing the mould and pressing every drop from the almonds make the difference.
Bombe Dame-Blanche (White Lady frozen bombe) teaches one principle above all: cold is an ingredient. Its vanilla shell must be evenly laid and frozen hard before the almond filling enters, or the two pale layers blur into one soft mass. Get that shell firm and the rest becomes assembly.
The original entry assumed a pâtissier-glacier with vanilla ice already waiting, metal bombe moulds packed in broken ice, and separate hands for the almond Bombe-preparation. At home, full-fat vanilla ice cream replaces the dedicated vanilla batch, a freezer-chilled stainless-steel mould replaces the bed of broken ice, and an electric mixer handles the pâte à bombe. Those are brigade scaffolding. Pressing the almonds through the sieve and clothing the mould evenly are the dish, so they stay. This version fills one 1.5-litre mould for eight generous portions, one cook, one stove, one evening of work while the freezer keeps watch.
When it is right, the bombe turns out as a smooth ivory dome, vanilla at the shell and almond at the heart, with only the faintest difference in colour between them. Press the steeped almonds hard enough to leave them nearly dry, then freeze the vanilla shell until your fingertip cannot dent it. That is the step that decides the dish.
