A consommé clear enough to catch the light, yet deeply scented with fresh truffle: the clarification removes every cloud while the pounded trimmings give the broth its quiet, earthy authority.
Consommé à l’Essence de Truffe (clarified broth perfumed with fresh truffle) teaches the deepest lesson of consommé: clarification is not only subtraction. The raft removes haze while it gives flavor. The one true thing to know before touching the pan is this: stock, meat, and egg whites must begin refrigerator-cold and warm together slowly. A warm start or rolling boil scatters the raft, and with it your clarity.
The original entry assumed a saucier on staff, a stockpot never off the fire, brigade quantities, and a bowl of fresh truffle peelings accumulated during other preparations. At home, you begin with ten cups of finished cold stock and use whole fresh truffle when trimmings aren't available, because one supper does not produce four ounces of scraps. That is the honest change. The source proportion remains exact, two ounces of truffle per finished quart, and the fresh-only rule stays. Repeated holding and filtering were brigade scaffolding; one controlled clarification and one careful cloth straining serve one cook, one stove, one evening.
The finished consommé should be amber-clear and profound, with no visible truffle announcing what the first spoonful already tells you. The slow formation of the raft is the dish, and it cannot be hurried. Begin cold, stir until the raft rises, then take your hands off it.
