Consommé à l’Essence de Céleri (clear consommé perfumed with celery) teaches one true thing before you touch a pan: celery has no fixed strength. One bunch can whisper; another can bully the whole pot. The measure is set with your nose and your spoon, tasting the broth hot, because cold broth conceals aroma and makes a timid hand look wise.

The original entry assumes a saucier at the stove, clarified stock never off the fire, and enough celery essence to adjust a service pot by instinct. At home, three quarts of cold stock become about two quarts of finished consommé, and a small covered infusion replaces the separate essence pan. Repeated transfers and holding vessels were brigade scaffolding, so they go. Clarification and final judgment are the dish, so they stay. One cook, one stove, one evening.

When it is right, the broth is amber and lucid enough to reveal the porcelain beneath it, with celery arriving first in the aroma and meat carrying the finish. Keep one cup of plain consommé in reserve. The step that decides everything comes at the end: add the essence by spoonfuls, taste between them, and stop before freshness turns green and bitter.
