Consommé à l’Indienne (clear curried broth with coconut-milk royale) teaches the discipline of contrast: brilliant hot consommé, tender cold royale, and dry rice offered separately so each element keeps its character. The one true thing to know before touching a pan is this: the royale must set without boiling. Treat it gently and it cuts into ivory dice; overheat it and the custard turns porous and tough.

The brigade formula assumed a stockpot never off the fire, a saucier ready with clear consommé, three baba-moulds, and Riz à l’Indienne (No. 2254) prepared elsewhere by another pair of hands. For this two-quart home batch, the entry’s ratio is doubled exactly to six moulds’ worth of royale and eight tablespoons of rice. One shallow heatproof dish replaces the baba-moulds, those small deep cylinders, because their shape disappears when the royale is diced. The staff schedule and separate moulds are scaffolding; clear consommé, curry, coconut royale, and separately passed rice are the dish and must stay.

This is entirely manageable for one cook, one stove, one evening, and better still when the royale and consommé are prepared ahead. Set the custard low and slow, chill it until quite firm, then bring the soup together only when the table is ready.
