Consommé Germiny (sorrel-thickened consommé) teaches the central rule of every consommé lié: richness comes from a liaison, not from flour, and the liaison must thicken without ever boiling. The source groups Germiny with Coquelin among soups that refuse the templates of velouté and cream. Cook it by its own name. The word carries the technique.

The original category assumed a stock never off the fire, a saucier watching the final binding, and portions meant for a dining room. At home, seven cups of clear, well-strained chicken consommé, an immersion blender in place of pounding and repeated passing, and one heavy saucepan do the same honest work. Here, the brigade quantity is cut to about two quarts, while the holding and repeated sieving go because they are service scaffolding. The concentrated consommé, sorrel cooked in butter, and yolk-cream liaison stay because they are Germiny. One cook, one stove, one evening.

When it's right, the soup is ivory touched with olive green, bright with sorrel, rounded with cream and butter, and light enough to remind you that it began as consommé. Temper the yolks patiently and stop before the first bubble. That is the one step that decides the pot, and if the edge turns grainy, ça se rattrape.
