Suprêmes de Faisan Châtelaine (Châtelaine-style pheasant breast medallions) teaches cold construction. The one true thing to know before touching a pan is that every layer must set before the next one arrives. Cold mousse supports the chaud-froid coating, cold coating holds beneath the aspic, and impatience collapses the whole handsome arrangement.

The original assumed a saucier on staff, stock never off the fire, brigade quantities of mousse and sauce, and enough ice to turn service into architecture. At home, two small saucepans handle the coatings, measured gelatin gives excellent consommé the body of aspic, and a deep square dish nested in crushed ice replaces the carved block. The linked suprême preparation stays whole. Brigade volume and the grand ice display are scaffolding and can go; the two mousses, contrasting chaud-froid sauces, truffle, and clear aspic are the dish and must stay.
