Caneton aux Olives teaches restraint in a braise. The olives do not cook alongside the duck. They are blanched to soften their salt and bitterness, then warmed in the sauce only minutes before serving. Add them early and their brine takes possession of everything. That is the one true thing to know before you touch the pan.

The brigade recipe assumed a saucier on staff, a stock never off the fire, and a salamander waiting to glaze the bird at the last moment. At home, a snug cocotte builds and reduces the sauce in one vessel, good unsalted poultry stock supplies the foundation, and the broiler gives the final lacquer. What changes is scale and equipment: one young duck for four, one pot instead of a procession of saucepans. The separate sauce station was scaffolding. The deep fond, short reduction, blanched olives, and last-minute glaze are the dish itself.

When it is right, the duck reaches the table burnished and shining, surrounded by green olives in just enough sauce to coat a spoon and pool beneath each carving. Brown every surface patiently, but guard the olive timing most carefully: blanch them, drain them, and keep them out of the cocotte until the final five minutes.
